There is no food prep sink on the premise staff indicated they use the middle sink of the three compartment sink that is attached to a grease interceptor to wash produce currently. There is not sufficent space to install a prep sink in any of the food prep areas and a Request for Variance was left with the person in charge to fill out.

Observed small dark rodent droppings in the back storage area underneath metroshelving on the radiator behind the desk and on the window sill with the air condtioner; have your pest control operator perform a service and as many as required to provide a clean IPM style report with no evidence no captures that exclusionary work has been completed and sanitation inside the restuarant is at an adequate level. The most recent pest control reports were requested from the owners.

A can of WD40 missing its cap was observed stored directly above the food slicer on a wire shelf in the food prep area; chemicals should be stored away from food utensils equipment linens single service single use items. This was corrected on site after the health inspector pointed out the can to staff.
