Above the warewashing area and the rear food prep area there are exposed HVAC ducts and utility lines; provide enclosed utility lines or provide a ceiling below the exposed utility lines and HVAC ducts that is cleanable durable nonporous.

There is no dedicated food prep sink at the establishment and there is not sufficent space to install one the three comparement sink where per the PIC produce is washed is attached to a grease interceptor. Fill out and return the request for variance form and follow the supplied operating procedures for using a three compartment sink as a prep sink.

There is no mop sink at the establishment; have a licensed plumber pull proper permits and install an enclosed mop sink.
